Expert obtained his Ph. D. in organic chemistry in 1997. He followed post-docs at the French National Institute for Agricultural Research (INRA Montpellier and Versailles). His research focuses on medicinal plants, natural products, especially polyphenols and their role in food technology, their organoleptic properties and their beneficial effects for human health. His research on medicinal plants focuses on extraction, isolation and structural elucidation of natural products pertaining to different family (essential oils, polyphenols, iridoids, ...). His research on polyphenols concerns also the transformations that such compounds could suffer during manufacturing, storage and ageing. The reactions responsible of these transformations has been investigated and the newly formed compounds were isolated, identified and theis effects of the newly formed compounds on the organolepti properties of foods has been discussed. Expert has published many research papers and he is a reviewer for various international scientific journals.
