He has published over 80 journal articles, 126 abstract, and made over 37 symposia and invitational presentations. He is a leading expert in cheese technology, cheese processing and sprayed dried products. He visits approximately 15 food plants within the United States per year. He regularly consultants outside of the United States where he focuses on sanitation (CIP, COP), dairy processing, energy cost, laboratory tests, and packaging issues. He teaches food processing, packaging and research & development courses at the University of Kentucky.
