Expert has been concerned with the subject of flavour analysis, particularly from the viewpoint of flavour research. He has advised major flavour companies on food analysis projects with the objective of determining their chemical flavour contributors. He's also done a great deal of organoleptic evaluation of the results of flavour analysis and the possible use of the identified materials in new flavour formulations.

He has first-hand experience of flavour encapsulation techniques such as spray-drying and coacervation. And Expert has done development work on gum acacia substitutes and the use of modified starches.

Expert has more than 40 years of experience in the organoleptic examination of flavourings and food containing flavourings. This has included the examination of off-flavour and taints due to the deterioration of either added flavourings or the food itself including food/flavouring interactions. He has been instumental in managing analytical programs to verify the chemistry of the off-flavour with its sensory profile.

Expert has experience with the use of acetaldehyde in the formulation of a variety of flavours and safety precautions that are necessary in the handling of the material in flavour production situations. He also has experience in the use of acetic acid as a flavouring material and as a food acidulant.
