ENZYMAL FOOD PROCESSING. Much of Expert's work is involved with discovering ways to apply enzymes from marine sources towards industrial applications. His current research includes collagenase, pigmentation of salmonoid fish, market life of fresh fish, comparative biochemistry of fish digestive enzymes, in vitro methods for protein digestibility by fish, use of exopeptidases to accelerate cheddar cheese ripening, and recovery of plant proteinese inhibitors from agricultural by-products. His emphasis is on proteolytic enzymes. FISH MEAT; SEAFOOD. Expert is interested in discovering methods of extending the market life of fresh fish and seafood. He is studying the chemical and biochemical changes that contribute to deterioration of meat quality, as well as the mechanisms of such changes. He is also involved in developing new uses for the by-products of fish processing wastes. ENZYMOLOGY; PROTEINASE. Expert works primarily with proteolytic enzymes, with an emphasis on digestive proteases common to marine organisms. The enzymes he has worked with include pepsins, gastricsins, chymosins, trypsins, cathepsin C, collagenase, and exopeptidases.
