FOOD CHEMISTRY; FOOD DRYING. Expert is a recognized authority in the physical chemistry of the stability of dry and semi-moist systems including foods, drugs, and biologies. His major research areas deal with the effect of temperature and are properties of water with respect to the processing and storage stability of drugs and foods and the analysis of the biophysical properties of macromolecules in relation to water binding. Much of his work involves the applications and measurement of moisture sorption and diffusion within mixed systems and the influence of glass transition pnenomena.

WATER ACTIVITY. Expert is a leading expert in water activity. He has taught courses on this subject, and studies water activity as it relates to food chemistry.

MOISTURE/SORPTION PHENOMENA. Expert is one of only a few experts who work on the influence of water in the low to semimoist state on chemical, enzymatic, and microbial reactions. He employs this to solve problems in foods, drugs, cosmetics, and other industrial materials, both in manufacturing and distribution. This work is closely tied to glass-rubber transition phenomena.

FOOD SHELF LIFE TESTING. Expert is a leading expert in the design of shelf life testing procedures for foods and pharmaceuticals. He also helps clients understand the influence of process/package/distribution effects on shelf life. Expert has published over 100 papers in this area and has several personal computer programs to help clients.

FOOD & DRUG PACKAGING. Expert has primary expertise in the analysis of the package requirments for food or drugs based on moisture and oxygen transmission rates. He is a prime developer of edible films. He has personal computer programs to help model the requirements and do simulations.

FOOD & DRUG REGULATIONS; FOOD AND DRUG ADMINISTRATION REGULATION; UNITED STATES DEPARTMENT OF AGRICULTURE. Expert teaches one of the few courses in public universities on food and drug laws. He maintains current files on all food and drug cases, regulations, etc. Expert helps many clients do regulatory analyses of their products. He spent a year sabbatical with the USDA and FDA.

FOOD PROCESSING; FOOD TECHNOLOGY. Expert has basic knowledge of the principles, design, and analysis of all food technologies and is up-to-date on all new potential technologies. He maintains a database on potential new technologies for food processing. He can answer in-depth questions relating to food freezing, dehydration, food additives, gels, and colloids.

Expert received the IFT Appert Award, the highest award given in food science. He has also received the following commendations: the Marcel Loncin Research Award (IFT), the DFISA Food Engineering Award, the Babcock Hart Nutrition Award (IFT), the Creuss Teaching Award (IFT), the S.C. Prescott Research Award (IFT) and the Minnesota Morse Alumni Distinguished Teaching Award. Additionally, Expert was elected an IFT Fellow.
